On the weekend I picked up a bargain $5 box of fruit and vegetables while searching for a particular sauce I love (more on that in later weeks). Not one to pass up a bargain, I bought the box. Only I wasn’t really sure what to do with all the items. They were discounted for a reason – they were all about to go off and some had bruises all over them. So it had to be something that allowed them to be chopped up & the bad areas discarded.
Not really knowing what to do, I was flicking around on Pinterest for ideas and realised I could make pesto!! I’m not able to follow a recipe, so I looked up a few and realised most are 1-2 vegetables, 1 cup nuts & some oil. So that was my guideline for making these:
For the spicy sweet potato pesto, I added hot chili pepper and paprika. I don’t measure things, I just guess 🙂 This is the only one I’ve tried so far. I like it but it’s also more like a mash than a pesto. That would probably be solved if I would just measure things and follow a recipe!
